Turkey skewers
Preparation: 15 minutes
Cook: 30 minutes
Servings: 4
INGREDIENTS
For the chipotle-bourbon BBQ sauce:
1 cup ketchup
1 tbsp tomato paste
1 small, canned chipotle pepper + 1 tbsp canned adobo sauce
1/4 cup bourbon
1/4 cup molasses
1/4 cup honey
1/4 cup soy sauce
3 tbsp apple cider vinegar
2 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
For the turkey skewers:
2 tbsp butter, melted
1 tsp honey
1 tsp brown sugar
1/8 tsp vanilla paste
3 to 4 peaches, halved and pitted
2 large turkey breast fillets, sliced into strips
INSTRUCTIONS
Preheat the grill to medium-high heat and, using oven mitts and tongs, rub the grill grates with olive oil (make sure the grill has been brushed and cleaned beforehand).
While the grill is heating, add all the BBQ sauce ingredients to a small saucepan and simmer until the sauce has reduced and thickened slightly. Stir occasionally to prevent it from burning on the bottom. Remove from heat and set aside.
In a small bowl, combine the melted butter, honey, brown sugar, and vanilla, then pour over the peach halves and coat well.
Next, thread the turkey strips onto the skewers (if using wooden skewers, be sure to soak them in water first to prevent them from catching fire on the grill). Once the peaches and turkey skewers are ready, transfer them to the grill, leaving space between them. Place the peaches so they have grill marks.
Cook until the turkey’s internal temperature reaches 165 degrees F and the peaches are tender and juicy, making sure to flip the skewers halfway through cooking.
Using a pastry brush, brush the sauce over the skewers and cook for 2 to 3 minutes more, then flip and brush the other side and repeat.
Remove the turkey skewers and peaches from the grill and serve immediately.
